The Foundation: Getting Wings Crispy Every Time

Before the sauces, the technique matters. These steps apply to all five variations.

Pat the Wings Completely Dry

Moisture is the enemy of crispiness. After removing wings from packaging, pat every surface thoroughly dry with kitchen towel. If time allows, leave uncovered in the fridge for 1–2 hours before cooking.

Use Baking Powder, Not Baking Soda

A light coating of baking powder (not baking soda — different thing) mixed with salt accelerates the Maillard reaction and produces a crunchier, more golden result. Use 1 teaspoon of baking powder per 500g of wings.

💡 Key rule: Apply sauces AFTER cooking, not before. Saucing before cooking creates steam and prevents the skin from crisping.

Base Cooking Method (applies to all 5 variations)

Variation 2: Sticky Korean BBQ

South Korean yangnyeom chicken is globally popular for good reason. The air fryer replicates the double-fry effect with two short cooking cycles.

Sauce: 3 tbsp gochujang, 2 tbsp honey, 2 tbsp soy sauce, 1 tbsp rice wine vinegar, 1 tsp sesame oil, 2 cloves garlic (minced), 1 tsp fresh ginger. Cook wings 18 minutes, toss in sauce, return to air fryer 4–5 minutes at 200°C to caramelise. Garnish with sesame seeds and spring onion.

Variation 3: Lemon Pepper

A dry-rub variation — clean, bright, and surprisingly complex. Great for guests who prefer less heat.

Rub: Zest of 2 lemons, 2 tsp cracked black pepper, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, ½ tsp smoked paprika, 1 tbsp olive oil. Toss wings before cooking. Finish with fresh lemon juice straight from the fryer.

Variation 4: Garlic Parmesan

Rich, savoury, and addictive. One of the most crowd-pleasing wing flavours.

Sauce: 4 tbsp butter, 6 cloves garlic (minced and cooked in butter until golden), 1 tsp Italian seasoning, salt and pepper. Toss hot wings in garlic butter immediately, then shower with finely grated Parmesan.

Variation 5: Honey Sriracha Lime

The balance of sweet, spicy, and citrusy makes this the most versatile wing sauce.

Sauce: 3 tbsp sriracha, 2 tbsp honey, juice of 1 lime, 1 tbsp soy sauce, 1 clove garlic (minced). Simmer 2 minutes to reduce slightly before tossing with hot wings.
